

Cali-Style Breakfast Tacos

Directions
- Preheat oven to 400º.
- Place bacon on tray and bake for approx. 18-20 minutes until crispy.
- Heat olive oil in pan on medium heat, add green onion and sauté for 1 minute.
- Whisk together eggs in a bowl, pour beaten eggs into pan. Cook eggs until thickened and soft.
- Assemble breakfast tacos by adding eggs to tortilla, topped with green onion, plenty of crumbled bacon, diced avocado, sliced jalapeno, cheddar cheese, and cilantro. Season with salt and pepper.

- 1 tbsp olive oil
- 4 large eggs
- ½ cup shredded cheddar cheese
- Salt & pepper
- ½ avocado, diced
- 2 tbsp chopped cilantro
- 3 jalapenos, sliced
- Chipotle aioli (to taste)
- 4 tortillas
