Cali-Style Breakfast Tacos

Directions

  1. Preheat oven to 400º.
  2. Place bacon on tray and bake for approx. 18-20 minutes until crispy.
  3. Heat olive oil in pan on medium heat, add green onion and sauté for 1 minute.
  4. Whisk together eggs in a bowl, pour beaten eggs into pan. Cook eggs until thickened and soft.
  5. Assemble breakfast tacos by adding eggs to tortilla, topped with green onion, plenty of crumbled bacon, diced avocado, sliced jalapeno, cheddar cheese, and cilantro. Season with salt and pepper.
  6. Enjoy!

  • 8 Strips of SunnyValley Applewood Smoked Bacon
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • Salt & pepper
  • ½ avocado, diced
  • 2 tbsp chopped cilantro
  • 3 jalapenos, sliced
  • Chipotle aioli (to taste)
  • 4 tortillas
